Best Chicken Salad Recipe...Simple...Easy....And The Best!
What You Will Need For Your Chicken Salad
•Hellman's Mayonnaise 3/4 of a jar (Only Hellman's!)
•2.5 pound bag of frozen boneless skinless chicken breast
•2 stalks of celery
•1 medium yellow or white onion (whichever you prefer)
•1/4 red onion
•3 Tbsp relish
•2 green onions
•salt and pepper

Let's Make Some Chicken Salad!
Boil your chicken slooowly. I like to bring the water to a boil, put the chicken in, and then bring to a hard boil again. Then turn your heat down to medium, and cover. Let the chicken simmer slowly for about 2 hours. Take the chicken out, and let it sit to the side for at least 15 minutes before you cut it. If you cut the meat while it is still hot, it will be dry, so don't do it.
Cut your celery into very small pieces. If the pieces of celery are too big, the taste will over power the chicken salad. You basically want the celery to add some crunch.
The same goes for the onion. Cut into small pieces. The red onion here is optional, if you do not like red onion, then don't use it. I love the taste that it adds, and I love to use 2 different kinds of onion.
Well, actually 3 kinds. Same goes for the green onion. Small pieces is the key! It adds the flavor that really makes it.
Take half of your chicken and shred it just like you would do barbecue. Take the other half and cut into medium size chunks.
Now mix what you have already cut up with 3/4 of a jar of Hellmann's mayonnaise. I say Hellmann's only because it has it's own unique flavor. Of course this recipe will work with any kind of mayonnaise, and I know that there are a lot of Miracle Whip lover's out there too, but try Hellman's this one time if you haven't already. I have tried many chicken salad recipe's and none of them even come close to the taste of one made with Hellman's, it is just different.
Now, add in your 3 Tbsp. of relish, and give it a little taste. Always salt and pepper it last because you need to taste it to get an idea for how much you will want to put in. I usually add a little at a time, because of course we all know that we can always add more, but you sure can't take it back out once it is in.
I have also given it a few dashes of steak seasoning a time or two, and this also adds a really good flavor. In my opinion, steak seasoning adds a really good flavor to almost anything!

Time To Eat Chicken Salad! Different Ways To Serve
I love chicken salad sandwiches, but this is really good on crackers too. So you can serve it as the main dish, or just as a snack. I recently ate some of this on cheddar wheat crackers, and it was delicious! Other Ideas:
